Amaranth is a Central American native crop, it's not a "real" cereal and it's totally free of gluten.  It's an easily digestible food, suitable for children and seniors as well. Try it mixed with other flours when making your favourite pastry!

Amaranth is rich in protein, about 16%, which have a high biological value, because it contains almost twice as much lysine, the essential amino acid, that almost all other cereals lack. It's also a good source of fibers.
