Compared to common wheat it contains higher percentages of lipids, amino acids, vitamins and minerals, but especially it is characterised by high digestibility.
For decades it has been the most widespread cultivation, especially in Basilicata and Apulia: then, due to its very low quantitative yield (which on the contrary is a synonym of the highest quality), the wheat Senatore Cappelli was replaced by the more productive plantations.
